Green beans are low calorie, low FODMAP, packed with nutrients and full of fibre. So why not include them as a wonderfully tasty side dish this festive season, but of course, dressed up for the occasion! Just a small amount of bacon and sourdough bread crumbs transforms this from an everyday staple to a slightly indulgent showstopper.

Tip: Making your own sourdough bread crumbs is SO easy. Use some older / stale bread and whizz it up in a processor. They freeze well too.

Top and tail the green beans, then add to a pan of boiling water with a good pinch of salt. Cook for 5 minutes, or to preference. Tip: 3-4 minutes for al dente and extra bite!

Meanwhile, fry the bacon lardons in a hot nonstick pan over a medium high heat until crispy and delicious.

Remove the lardons from the pan, and use the leftover bacon fat to fry up the bread crumbs for 2 minutes, until golden brown.

Once the beans are cooked to your liking, drain and place in a warm bowl. Season with salt & pepper and a drizzle of olive oil. Top with bacon and bread crumbs, then serve!

100g Bacon lardons / streaky bacon, chopped up

50g Sourdough bread crumbs

Olive oil

Salt & pepper
