These Bacon, Halloumi, and Pesto Bites are little pieces of heaven! Up to 50g of Halloumi can be enjoyed as part of a low FODMAP diet, but those with more of a tolerance to lactose can certainly have more. They are super quick to make and perfect for a quick dinner or as an appetizer at a party!

Method

Preheat oven to 220℃.

Place bacon stretched out and line with pesto sauce.

Place 1pc of halloumi on top of bacon and roll until completely wrapped. Hold closed with toothpick.

Repeat until all cheese is wrapped.

Place the halloumi bites onto an oven tray and lightly drizzle with olive oil.

Bake for 20 minutes or until bacon is cooked through and halloumi is tender - we recommend to baste with juices halfway through.

Once cooked, allow to rest for 5 minutes.

Plate 3 bites on a bed of mixed leaves (spinach and rocket) and drizzle with 1 tbsp of balsamic vinegar.

Ingredients

170g Halloumi Cheese cut into 12 pieces

4 Thinly Sliced Streaky Bacon Rashers

2 tbsp Pesto

1 tbsp Olive Oil

25g Spinach Leaves

25g Rocket/Arugula

1 tbsp Balsamic Vinegar per serving
